How It all Began

Dillicious was born from one simple truth: Australia deserved better pickles.

James grew up in Virginia, USA, where a jar of tangy, crunchy dill pickles was never far from reach. Liza grew up on the Mornington Peninsula, where pickles barely made it to the dinner table. The two met while volunteering in the Kingdom of Tonga, fell in love, and eventually made Australia their home.

But there was a problem — there wasn’t a truly great American-style pickle to be found. So James rolled up his sleeves, called on his food industry know-how, and started making them himself. Liza, a public health nutritionist and dietitian, made sure every jar was as healthy as it was delicious. From that moment, the mission was clear: give Australians the kind of pickle that could convert even the staunchest skeptic.

Our Pickles & Ingredients

At the heart of every jar is a Kirby cucumber — the hero of a proper American-style dill pickle. Ours come from the 'Bowie' seed variety, grown on family farms in Bundaberg and Ayr, Queensland. These cucumbers were born to pickle: perfect skin thickness, just-right seeds, and a satisfying snap that holds up in brine.

We keep it simple: all-natural, plant-based (with the exception of honey in our Not So Sweet pickles and Life of the Party hot sauce), sulphite-free, gluten-free, and with no preservatives or added sugar. Everything in the jar is something you'd find in your pantry or your garden.

Our small-batch process means flavour and texture come first. We work hand-in-hand with our farmers and suppliers to make sure every ingredient — and every person involved — is treated with the care they deserve. Because great pickles start with great relationships.
