OUR STORY
James has been a pickle addict since childhood. Spears from the fridge. Juice straight from the jar. No shame.
The only problem? The best pickles were always imported. And the question that eventually started Dillicious was a simple one: why can't great pickles be made right here in Australia?
Turns out, they can. James and Liza had spent years in food — James in fresh produce and supply chains, Liza as a dietitian in sustainable food systems. They knew what good looked like from paddock to plate. They just needed to put it in a jar.

We make American-style dill pickles and brine-infused condiments, proudly made in Australia from premium Aussie ingredients. No shortcuts, no pretending to be something we're not.

We stand by everything we make. We use the best ingredients, hold ourselves to a high standard, and when we get it wrong, we fix it. If you're not 100% satisfied, neither are we.

OUR INGREDIENTS
You can't make great pickles without great ingredients. It's that simple. All of our fresh produce is 100% Australian, and we source Aussie across everything we can — from buckets to labels to cartons. For most of the year, our Kirby cucumbers come from the Pirrone Brothers in North Queensland — growers who care as much about quality as we do. We work side by side, season after season, pushing each other to be better. When the Pirrones' season wraps, we partner with other growers who share that same commitment to excellence. That relationship is in every jar.
OUR IMPACT
We're proud to be part of the Net Zero Australia Program, working toward meaningful sustainability in everything we do. But impact isn't just about carbon or waste — it's about people. Customers sharing stories at markets, emails telling us how much our pickles mean to them, and a community that shows up for each other. We work really bloody hard for it. And we feel like winners.
